Vegans at our house!

 Eliza and Madi have been vegetarian for years now, but they have decided to go completely vegan lately!  They are constantly cooking and baking very interesting things...  we're enjoying all of the beans and hummus and vegetables.
 Lyrad, Rachel, Josh and I are NOT vegan, though we've always eaten lots of vegetables and beans and very little meat.  And I do like to use milk and eggs when I bake.  I'm hoping this Vegan Phase doesn't last too long -- I get irritated when my vegans won't touch my whole wheat blueberry muffins (because of eggs) and super healthy minestrone soup (because of chicken bouillon) so instead they make concoctions of natural peanut butter and chocolate chips.  I've learned a new term:  "Pudding Vegan" (meaning a vegan who doesn't necessarily eat healthfully, but who eats lots of vegan junk food). 
Josh, on the other hand, has no interest in giving up animal products.  Here he is cooking an egg over his homemade stove.  He likes to make quesadillas on this little burner, too.  When he's not lighting candles for this stove (or to carve hot wax), he's trying to convince me that it's cold enough to build a fire in the fireplace.  It's often 60 degrees here, so we love cold days when we can get them!

Here's an idea for eggs--mix 1 T of flax flour (grind the seeds in a coffee grinder or buy it that way) with 2-3 T of water. Let it sit for 5-10 minutes until it gets to be the consistency of eggs. I've used it in whole wheat roll recipes (and other stuff) and I think it works even better than real eggs.

this is madi, &just to clarify.. i eat very little peanut butter these days and chocolate chips contain milkfat so they're not quite vegan, therefore i avoid these as well as muffins containing egg. don't wanna sound like a picky eater now, just felt like this post was calling me out as a "pudding vegan"? we wouldn't want that(: and b t dubs i love my veggies, esp. in minestrone soup.
